Seed bread crisps

The Valgeranna Veinitall wine set “Dedicated to Pärnu County” won the design award at the 2024 Pärnu County food souvenir competition.

The wine set consists of three wines, each telling a story about Pärnu County.

The Red (blackcurrant-chokeberry wine) is dedicated to the most iconic location of the producer’s hometown—the Pärnu central beach. As its symbol, the label is adorned with the beach building’s mushroom-shaped terrace. Designed by architect Olev Siinmaa, the building was completed in 1939 as a jubilee gift, a year when the 100th anniversary of the Pärnu resort was grandly celebrated.

The White (dry gooseberry wine) is crafted to pair with local fish dishes and symbolizes the Pärnu and Audru rivers. The label depicts a fisherman alongside “Luik” (Swan), the original winning design from the architectural competition for Pärnu’s infamous third bridge.

The Wild Lingonberry reflects the hiking trails of Pärnu County and the autumn bounty gathered there. The wine’s aroma transports the connoisseur in thought to the autumn forest floors and the hiking trails of Tolkuse and Riisa bogs.

Weed pesto

Weed pesto was voted the best product of Pärnu County in 2021 in the Pärnu Postimees online poll.

The idea for the weed pesto came about in 2018 during the opening event of the Pärnu County Year of Flavors, where Evari Tšetšin and Marek Sild were tasked with making something delicious out of weeds. This led to a pesto made from seasonal wild plants, which was served alongside cow parsnip pie. A year later, on February 24th at the President’s reception for the 101st anniversary of the Republic of Estonia, the weed pesto shone on the appetizer table. This was thanks to the courage of Evari Tšetšin, then head chef of Umberto restaurant, to step before the Office of the President’s head chef jury with appetizers where weeds played the starring role. This is how the pesto became highly popular.

The pesto contains wild greens: nettle, sweet cicely, angelica, fireweed, wood sorrel, and many other plants that can be found seasonally in the forest. The base herb is flat-leaf parsley, while garlic and chili add a kick to the pesto. The pesto contains no cheese or nuts, even though they belong in a traditional recipe.

Blackcurrant
treat

Blackcurrant treat was selected as the best food souvenir at the 2018 Pärnu County Flavors food competition.

The blackcurrant treat and its packaging are made following the principles of circular economy. The treat is crafted using the berry skins and seeds left over from juice pressing, which are the most vitamin- and nutrient-rich parts of the berry. After pureeing, the seeds and skins are pressed into a dense mass and dried at 40°C for 12 hours.

The dried sheet of mass is then rolled up tight, sliced into rounds, and tossed in blackcurrant flour. The result is a healthy treat rich in vitamin C and containing flavonoids beneficial to the cardiovascular system. In addition to blackcurrants, the treat contains apple or pumpkin puree and sugar. The product is free of additives, and its packaging utilizes fabric manufacturing scraps and cotton ribbon salvaged from fabric rolls.

The treat was created in collaboration between the author of the idea, Merle Einola, and the blackcurrant treat producer, Kadri Kontkar from Kaatarusaare Farm.

Acorn cookies were selected as the best new product at the 2018 Pärnu County Flavors food competition.
